The next instalment in our series of spruce beers that have become an institution here at Wild Weather! In fact, we're pretty sure we've brewed more spruce beers in the UK than anyone else. The Sitka spruce tips for this particular iteration were were hand foraged by Wild Weather staff and volunteers from Reading Amateur Brewers on 28/05/22 from Benyons Enclosure, right behind the brewery! These spruce tips can only be harvested in a 2-3 week period in the year, so we are incredibly lucky to have such an abundance on our doorstep. The unique element that the tips add to this punchy West Coast IPA is well worth the effort it takes to harvest them. The sticky, sweet resin aroma rises from the beer and greets you before naturally fresh, fruity, citrus characteristics of the spruce tips shine as you take your first sip. Paired with delicious pine and berry notes from the subtle Simcoe hops, you'll never try another West Coast IPA quite like this one.
